I’ve always been a fan of Mexican food – salsa, enchiladas, quesadillas, you name it.  But up until 3 or 4 years ago, the mere thought of guacamole made me want to gag.  Why would I ruin a perfectly good chip with that green stuff?  But then Gwyneth Paltrow posted a video on her website entitled, ‘Mexican Dinner, Family Style‘ and made everything look so.darn.good.  And knowing that Gwyneth was such a health nut made me want to try everything she made that much more.  So, after years of avoiding guacamole, Gwyneth Paltrow was the one who finally got me to try it.  Here’s my favorite quick & easy recipe that I eat with chips, eggs, on toast, etc.  It’s amazing.  Thanks for the inspiration, Gwyn! (Like I talk about her like we’re old pals?)

Guacamole Recipe

Serves 4

Prep time: 10 minutes

Notes: If you’re making it ahead of time, reserve the pits of the avocados and leave them in the bowl until it’s time to serve.  This will keep the guac from getting brown!

Ingredients:

  • 2 ripe avocados
  • 1/4 cup red onion, minced
  • 1 lime
  • sea salt

Cut each avocado in half and score the inside of the shells. Scoop the avocado into a bowl and mash with a fork until it’s the texture you like (I like mine really smooth with no chunks).  Add the onion and mix until it’s evenly distributed throughout the avocado mixture.  Add a splash of fresh lime juice (I use the juice from an entire lime).  Season with sea salt and serve!
